Meat Fatayer (Fatayer Lahme)

Ingredients
- 3 cups bread flour
- 1 1/2 tsp active dry yeast
- 1 tbsp white granulated sugar
- 1 tsp salt
- 1/3 cup avocado oil (or any neutral oil)
- 1 cup water or milk
- ground beef
- 2 tbsp avocado oil, for browning beef
- 1 onion, diced
- 1 tsp salt, for filling
- 1/2 tsp black pepper
- 2 tsp seven spices (baharat)
- 1 tbsp avocado oil, for toasting pine nuts
- 1/4 cup pine nuts
- 1 egg, beaten, for egg wash
Steps
- In a bowl, combine 1/2 cup warm water or milk, 1 tablespoon sugar, and the yeast. Let sit 5 minutes until foamy.
- Add 1/2 teaspoon salt and half the flour to the yeast mixture. On low speed, mix in the avocado oil, remaining milk, and remaining flour.
- Increase mixer speed and knead until the dough comes together smoothly.
- Shape the dough into a ball, place in a lightly greased bowl, cover, and let rise in a warm place for about 1 hour, until doubled.
- Divide the dough into 18-20 small balls, using flour to prevent sticking. Cover and let rise again for 30 minutes.
- Meanwhile, brown the ground beef over medium heat with 2 tablespoons avocado oil.
- Add the diced onion and sauté a few minutes. Season with 1 teaspoon salt, 1/2 teaspoon black pepper, and 2 teaspoons seven spices. Cook until the onion softens, then set the meat mixture aside.
- In the same skillet, heat 1 tablespoon avocado oil and toast the pine nuts until golden. Stir them into the meat mixture.
- Preheat the oven to 400°F (200°C) and line baking sheets with parchment paper.
- Roll out each dough ball into a 5-inch circle. Place about 2 tablespoons of filling in the center.
- Bring two sides of the dough together and pinch to seal, then fold up the third side to form a triangle and pinch all edges firmly to close.
- Arrange the fatayer on the prepared baking sheets. Brush the tops with beaten egg.
- Bake for about 12 minutes, or until golden brown.
