Green Bean Stew with Beef (Loubia)

Ingredients
- 1 lb beef stew cubes
- 2 lb green beans, fresh or frozen (Italian style)
- 1 bunch cilantro
- 8 cloves garlic
- 4 tbsp avocado oil
- 1½ cups crushed tomatoes (or ¼ cup tomato paste)
- 1 tsp dried coriander
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp salt
- ½ tsp black pepper
- ½ onion
- 3 bay leaves
- 1 tsp whole cloves
Steps
- Season beef with 1 tsp salt and ½ tsp black pepper, then brown in 1 tbsp avocado oil in a pressure cooker or pot.
- Add 6-8 cups water, onion, bay leaves, cloves, and remaining 1 tsp salt. Pressure cook 22 minutes with natural release, or simmer covered on the stovetop for about 90 minutes until beef is tender.
- Trim and cut green beans into 1-2 inch pieces; wash and set aside.
- Peel garlic and crush with ½ tsp salt in a mortar.
- Wash cilantro, remove stems, and finely chop.
- Heat 2 tbsp avocado oil in a large pot. Add chopped cilantro and crushed garlic, and sauté over medium heat for 5 minutes without letting the garlic burn.
- Add green beans and sauté for about 10 minutes.
- Remove cooked beef from the pot and strain the broth, reserving both.
- Add crushed tomatoes and 6 cups of the reserved beef broth to the green bean mixture, and stir well.
- Add the cooked beef and simmer over medium heat for 20 minutes.
- Season with dried coriander, salt, and pepper to taste.
- Serve hot with rice or vermicelli noodles.

Traditionally served over rice with vermicelli noodles.
