Meat Fatayer (Fatayer Lahme)

Ingredients
- 3 cups bread flour
- 1½ tsp active dry yeast
- 1 tbsp sugar
- 1 tsp salt
- 1/3 cup avocado oil (or neutral oil)
- 1 cup water or milk
- 1 lb ground beef
- 1 large onion, diced
- 3 tbsp avocado oil
- 2 tsp seven spice blend
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup pine nuts
- 1 egg, beaten (for egg wash)
Steps
- Mix warm water or milk with sugar and yeast; let sit 5 minutes until foamy.
- Add salt and half the flour to the yeast mixture. Mix on low speed, gradually adding oil, remaining liquid, and flour until a smooth dough forms.
- Shape dough into a ball, place in a greased bowl, cover, and let rise in a warm place about 1 hour, until doubled.
- Divide dough into 18-20 balls. Cover and let rise again for 30 minutes.
- Meanwhile, brown ground beef with a bit of oil over medium heat.
- Add diced onion to the beef; sauté a few minutes. Season with salt, pepper, and seven spice blend. Cook until onion softens, then set aside.
- In the same skillet, heat remaining oil and toast pine nuts until golden. Stir into the meat mixture.
- Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
- Roll dough into 5-inch circles. Place about 2 tablespoons of filling in the center of each. Fold two sides together and pinch to seal, then bring up the third side to form a triangle, pinching edges firmly.
- Arrange fatayer on the baking sheets and brush tops with beaten egg.
- Bake for 12 minutes, or until golden brown.
Notes
Seven spices is a common Lebanese spice blend typically including allspice, black pepper, cinnamon, cloves, cumin, coriander, and nutmeg.
