Chicken Fatteh

Ingredients

  • 19 oz. can chickpeas
  • 3 small pita bread loaves
  • 1/4 cup avocado oil, divided
  • 3 tbsp pine nuts
  • 2 small chicken breasts (or 1 large)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 5 cups water, for boiling
  • 1 1/2 cups plain yogurt
  • 2 cloves garlic
  • 2 tsp tahini paste
  • 1 tsp salt
  • 1/4 cup cold water
  • sumac, for garnish (optional)

Steps

  1. Season chicken breasts with 1 tsp salt and 1/2 tsp black pepper.
  2. In a small pot, heat 1 tbsp avocado oil and sear chicken on each side for 3-4 minutes.
  3. Add the 5 cups water and boil chicken until fully cooked, about 20 minutes.
  4. Remove chicken, let cool, then shred into bite-sized pieces.
  5. Cut pita bread into 2-inch squares, toss with 2 tbsp avocado oil.
  6. Air fry pita squares for 3-4 minutes, tossing every minute, until golden and toasted.
  7. Crush garlic and place in a bowl with yogurt, tahini, 1 tsp salt, and 1/4 cup cold water; whisk thoroughly.
  8. Refrigerate yogurt sauce until ready to serve.
  9. Drain and rinse chickpeas, then warm in a skillet with a little water over medium heat for about 5 minutes; drain.
  10. In a small skillet, heat remaining 1 tbsp avocado oil and sauté pine nuts for 2 minutes until golden brown.
  11. Just before serving, layer the pita chips, chickpeas, shredded chicken, and yogurt sauce.
  12. Top with toasted pine nuts and their oil, and sprinkle with sumac if desired.

Notes

Assemble just before serving to keep the pita crispy.
