One-Pot Chicken Tomato Bulgur Pilaf
🇱🇧 Lebanon
Ingredients
- 2 cups coarse bulgur (size #2 or #3)
- 1 lb chicken breast, cubed (1-1½ inches)
- 1 large onion, finely chopped
- 1 large tomato, finely diced
- â…“ cup tomato paste
- 3 tbsp olive oil
- 1½ tsp salt
- ¼ tsp black pepper
- 1 tsp garlic powder
- 3 cups chicken broth
Steps
- Chop the onion, dice the tomato, and cut the chicken into 1-1½ inch cubes.
- Heat olive oil in a medium saucepan over medium heat. Add chicken, season with salt, pepper, and garlic powder, and cook until about 80% done, about 10-15 minutes, stirring occasionally.
- Add onion and sauté 3-4 minutes until translucent.
- Stir in diced tomato and cook 2-3 minutes until softened.
- Stir in tomato paste and cook 2 more minutes.
- Rinse bulgur 2-3 times, then add to the pan and mix well with the chicken and tomato mixture.
- Pour in chicken broth, increase heat to medium-high, stir, and bring to a gentle simmer.
- Once most of the broth is absorbed (about 5-7 minutes), reduce heat to low, cover, and cook 10 more minutes until bulgur is tender and chicken is fully cooked.
- Turn off heat and let pilaf rest, covered, for 10 minutes.
- Remove lid, fluff pilaf with a fork, and serve warm.
