One-Pot Chicken Tomato Bulgur Pilaf

Ingredients

  • 2 cups coarse bulgur (size #2 or #3)
  • 1 lb chicken breast, cubed (1-1½ inches)
  • 1 large onion, finely chopped
  • 1 large tomato, finely diced
  • â…“ cup tomato paste
  • 3 tbsp olive oil
  • 1½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp garlic powder
  • 3 cups chicken broth

Steps

  1. Chop the onion, dice the tomato, and cut the chicken into 1-1½ inch cubes.
  2. Heat olive oil in a medium saucepan over medium heat. Add chicken, season with salt, pepper, and garlic powder, and cook until about 80% done, about 10-15 minutes, stirring occasionally.
  3. Add onion and sauté 3-4 minutes until translucent.
  4. Stir in diced tomato and cook 2-3 minutes until softened.
  5. Stir in tomato paste and cook 2 more minutes.
  6. Rinse bulgur 2-3 times, then add to the pan and mix well with the chicken and tomato mixture.
  7. Pour in chicken broth, increase heat to medium-high, stir, and bring to a gentle simmer.
  8. Once most of the broth is absorbed (about 5-7 minutes), reduce heat to low, cover, and cook 10 more minutes until bulgur is tender and chicken is fully cooked.
  9. Turn off heat and let pilaf rest, covered, for 10 minutes.
  10. Remove lid, fluff pilaf with a fork, and serve warm.

Notes

Delicious on its own as a main dish, or served with a light salad or plain yogurt.
