Lebanese Glass Noodle Salad

Ingredients
- 2 cups shredded cabbage
- 1 bunch parsley, chopped
- 1 bunch cilantro, chopped
- ½ bunch scallions, chopped
- 1 cup fresh mint leaves, chopped
- 1 cup shredded carrots
- 1 small bell pepper, thinly sliced
- 4 oz vermicelli rice noodles
- 1 lb shrimp (optional)
- ¼ cup lemon juice
- 3 tbsp olive oil
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp chili oil crunch
- 1 tsp salt
Steps
- Thinly slice the cabbage and place it in a large bowl.
- Wash and dry the parsley, cilantro, mint, and scallions, then finely chop them (discarding thick parsley stems). Add to the bowl with the cabbage.
- Add the sliced bell pepper and shredded carrots to the bowl.
- Place the glass noodles in a heat-safe bowl and pour boiling water over them. Let soak for 2–3 minutes until softened, then drain well.
- Heat a little sesame oil in a skillet over medium heat. Sauté the shrimp for 2–3 minutes per side until pink and cooked through. Chop into bite-sized pieces if desired.
- In a small bowl, whisk together the lemon juice, olive oil, sesame oil, soy sauce, chili oil crunch, and salt to make the dressing.
- Add the drained noodles and cooked shrimp to the bowl with the vegetables and herbs. Pour the dressing over and toss well to combine.
- Serve immediately, or refrigerate for 30 minutes to let the noodles absorb more flavor before serving.
Notes
Shrimp is optional; the salad can be made vegetarian by omitting it.
