Sheet Pan Kebabs

Ingredients
- 3 pounds ground chicken
- 1 large onion, quartered
- 2 medium red bell peppers, cut into chunks
- 1/3 cup parsley, roughly chopped
- 4 large garlic cloves
- 2 teaspoons salt, or to taste
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 2 teaspoons oregano
Steps
- Preheat oven to 375°F (190°C) with a rack in the upper third.
- Grease a sheet pan with oil, or line with foil and brush with oil.
- Set a fine mesh strainer over a large bowl.
- In a food processor, pulse onion, bell pepper, garlic, and parsley until finely chopped.
- Transfer the mixture to the strainer and press with a spoon to squeeze out excess liquid; reserve the liquid.
- Place the squeezed vegetable mixture in a large bowl with the ground chicken and spices; mix well.
- Spread the mixture evenly on the prepared sheet pan.
- Press two fingers along the length of the pan to create parallel indentation lines.
- Dip a spatula in the reserved vegetable liquid and use it to cut the mixture into individual kebabs along the lines.
- Bake on the upper oven rack for 15-18 minutes.
- Drain any accumulated liquid, then broil for a few minutes until nicely charred.
