Brownie Energy Bites with Dates

Ingredients

  • 1 cup soft medjool dates, pitted
  • 3/4 cup pepitas (or walnuts)
  • 1/4 cup hemp seeds
  • 1/4 cup cacao powder
  • 1/4 cup collagen peptides (optional)
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea salt, plus more for sprinkling
  • 2 tbsp milk of choice

Steps

  1. Blend dates in a food processor until a paste forms.
  2. Add pepitas and blend until finely ground.
  3. Add cacao powder, collagen (if using), vanilla, 1 tbsp milk, and salt. Blend until a sticky dough forms, adding more milk if needed. Avoid over-blending.
  4. Roll dough into balls and sprinkle with flaky salt.
  5. Store in the refrigerator or freezer; they keep for about 2 weeks.

Notes

No-bake, nut-free option available by using pepitas instead of walnuts.
