White Bean Salad with Hearts of Palm

Ingredients
- 3 tbsp extra virgin olive oil
- 2 green onions, thinly sliced (white and green parts separated)
- 1 garlic clove, minced
- 2 tbsp slivered almonds
- 1/4 tsp Aleppo pepper flakes (or a pinch of crushed red pepper)
- 1 (15 oz) can white beans, drained and rinsed
- 1 (14 oz) can hearts of palm, chopped
- 3/4 cup fresh parsley, chopped
- 1 tbsp capers
- 1 celery stalk, chopped
- 2 tbsp lemon juice, plus zest of 1 lemon
- 1/2 tsp salt, divided, to taste
Steps
- Heat olive oil in a medium skillet over medium heat.
- Add white parts of the green onions with a pinch of salt; cook about 2 minutes, stirring often, until starting to brown.
- Add garlic and almonds; cook 2-3 minutes until golden and fragrant.
- Remove skillet from heat and stir in Aleppo pepper.
- In a medium mixing bowl, combine white beans, hearts of palm, parsley, capers, celery, and green parts of the onions.
- Add the warm almond-oil mixture, lemon zest, lemon juice, and 1/4 tsp salt.
- Toss gently to combine, then season with additional salt to taste.
- Refrigerate; flavor improves as it sits. Store up to 4 days.
Notes
Salad tastes best after chilling for a bit to let flavors meld.
