Spicy Tuna Salad with Greek Yogurt

Ingredients

  • 1/4 cup plain Greek yogurt
  • 1 1/2 tbsp mayonnaise
  • 1 1/2 tbsp sriracha
  • 1 tbsp reduced sodium soy sauce (or tamari for gluten free, start with 2 tsp)
  • 1/2 tbsp rice vinegar
  • 2 tsp toasted sesame oil
  • 1 tsp honey
  • 2 (5 oz) cans tuna in water, well-drained
  • 1/2 cup diced celery
  • 1/2 cup chopped green onions
  • 1/2 cup shelled edamame, cooked

Steps

  1. In a medium mixing bowl, whisk together Greek yogurt, mayonnaise, sriracha, soy sauce, rice vinegar, sesame oil, and honey until smooth.
  2. Drain tuna very well and add to the bowl. Flake with a fork and mix into the yogurt dressing.
  3. Add celery, green onions, and edamame. Mix to combine.
  4. Garnish with toasted sesame seeds if desired. Serve with seaweed snacks, crackers, sliced cucumbers, or over a rice bowl.
  5. Store in the fridge for up to 3 days.
