Healthy Pumpkin Brownies

Ingredients

  • 3/4 cup almond butter
  • 1/2 cup pure maple syrup
  • 1/2 cup canned pumpkin puree
  • 1 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 2 tbsp ground flaxseed
  • 3/4 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/3 cup chocolate chips, plus more for topping

Steps

  1. Preheat oven to 350F. Grease an 8x8 inch baking dish or line with parchment paper.
  2. Whisk almond butter and maple syrup together in a medium bowl until well combined.
  3. Add pumpkin and vanilla, whisking again until smooth.
  4. Whisk in cocoa powder until combined.
  5. Add flaxseed, baking soda, and salt, whisking until smooth.
  6. Fold in chocolate chips.
  7. Pour batter into prepared baking dish. Top with extra chocolate chips and flaky salt if desired.
  8. Bake for 30 minutes.
  9. Let brownies cool completely before cutting with a sharp knife. Refrigerate for easier cutting if desired.

Notes

Best served chilled or the next day. Can be topped with chocolate cream cheese frosting.
