Protein Banana Bread with Greek Yogurt

Ingredients
- 1 1/2 cups oat flour
- 1 cup super fine blanched almond flour
- 1/3 cup coconut sugar
- 3/4 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp fine sea salt
- 1/4 cup hemp seeds
- 1/3 cup collagen peptides (optional)
- 1 cup mashed overripe bananas
- 3/4 cup plain Greek yogurt
- 3 large eggs
- 2 tsp vanilla extract
- 1/3 cup chocolate chips, plus more for topping (optional)
Steps
- Preheat oven to 350F. Line a 9x5 inch loaf pan with parchment paper.
- In a large bowl, whisk together oat flour, almond flour, coconut sugar, baking powder, baking soda, salt, hemp seeds, and collagen peptides.
- In a separate bowl, mash bananas to measure 1 cup. Add Greek yogurt, eggs, and vanilla, and whisk until smooth.
- Pour wet mixture into dry mixture and stir with a wooden spoon until just a few streaks of flour remain.
- Fold in chocolate chips without over-mixing.
- Pour batter into the prepared loaf pan and top with extra chocolate chips.
- Bake 50-55 minutes, until a toothpick inserted in the center comes out clean.
- Cool in the pan on a wire rack for 20-30 minutes, then transfer bread to the rack to cool completely.
- Store wrapped at room temperature up to 2 days, then refrigerate.
Notes
Use 1/2 cup coconut sugar for a sweeter bread. Collagen peptides are optional.
