Cottage Cheese Protein Waffles

Ingredients

  • 2 cups old-fashioned oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp fine sea salt
  • 2 cups whole milk cottage cheese
  • 6 large eggs
  • 3 tbsp maple syrup
  • 1 1/2 tsp vanilla extract
  • 1 cup blueberries, fresh or frozen (optional)

Steps

  1. Heat waffle iron over medium heat.
  2. Blend oats in a blender until finely ground. Transfer to a large bowl and whisk in baking powder, cinnamon, and salt.
  3. Blend cottage cheese, eggs, maple syrup, and vanilla until smooth.
  4. Pour wet mixture into dry ingredients and stir just until combined.
  5. Fold in fresh blueberries if using; if using frozen, add on top of batter instead of mixing in.
  6. Spray waffle iron well with cooking spray. Pour 1/2 cup batter onto iron and cook about 6 minutes, until golden.
  7. Spray iron again between batches to prevent sticking. Transfer cooked waffles to a wire rack to cool.
  8. Serve with fruit, butter, almond butter, or maple syrup.
