Cottage Cheese Protein Waffles

Ingredients
- 2 cups old-fashioned oats
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp fine sea salt
- 2 cups whole milk cottage cheese
- 6 large eggs
- 3 tbsp maple syrup
- 1 1/2 tsp vanilla extract
- 1 cup blueberries, fresh or frozen (optional)
Steps
- Heat waffle iron over medium heat.
- Blend oats in a blender until finely ground. Transfer to a large bowl and whisk in baking powder, cinnamon, and salt.
- Blend cottage cheese, eggs, maple syrup, and vanilla until smooth.
- Pour wet mixture into dry ingredients and stir just until combined.
- Fold in fresh blueberries if using; if using frozen, add on top of batter instead of mixing in.
- Spray waffle iron well with cooking spray. Pour 1/2 cup batter onto iron and cook about 6 minutes, until golden.
- Spray iron again between batches to prevent sticking. Transfer cooked waffles to a wire rack to cool.
- Serve with fruit, butter, almond butter, or maple syrup.
