Healthy Almond Flour Brownies

Ingredients

  • 1 cup almond flour
  • 2/3 cup cane sugar or granulated sugar
  • 1/3 cup cocoa powder
  • 1/4 tsp fine sea salt
  • 1/2 cup semi-sweet or dark chocolate chips, divided
  • 1/4 cup extra virgin olive oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • flaky salt, for topping

Steps

  1. Preheat oven to 350°F. Line an 8x8 inch baking dish with parchment paper.
  2. In a bowl, whisk together almond flour, sugar, cocoa powder, and salt.
  3. Add olive oil, eggs, and vanilla; whisk until smooth and glossy.
  4. Fold in most of the chocolate chips, reserving 2 tablespoons for topping.
  5. Pour batter into baking dish and sprinkle reserved chocolate chips on top.
  6. Bake for about 22 minutes for fudgy brownies with chewy edges.
  7. Top with flaky salt and let cool completely before slicing.
  8. For best texture and flavor, refrigerate for an hour before slicing, or chill overnight.
