Gluten Free Banana Bread

Ingredients
- 3 medium very ripe bananas
- 2 large eggs
- 1/3 cup maple syrup
- 1/4 cup oil
- 1 tsp vanilla extract
- 1 1/4 cups almond flour
- 1 1/4 cups gluten-free oat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp fine sea salt
- 1/2 cup chocolate chips, plus more for topping
Steps
- Preheat oven to 350°F. Grease a loaf pan.
- Mash bananas in a large bowl. Whisk in eggs, maple syrup, oil, and vanilla until well combined.
- Add almond flour, oat flour, baking soda, baking powder, and salt. Stir just until incorporated.
- Fold in chocolate chips.
- Pour batter into loaf pan and top with extra chocolate chips.
- Bake about 60 minutes, loosely covering with foil around the 40-minute mark to prevent over-browning, until a knife inserted comes out almost clean.
- Cool in the pan for at least 30 minutes, then transfer to a wire rack to cool completely.
Notes
Store at room temperature in an airtight container up to 3 days, or refrigerate up to a week or more.
