Lamb Kofta (Kafta)

Ingredients
- 1 small onion, finely minced
- 3 garlic cloves, minced
- 1/4 cup fresh parsley, finely chopped
- 1 teaspoon 7 spice blend
- 1 teaspoon cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon cinnamon
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound ground lamb
- 1/2 cup plain Greek yogurt
- 1/4 cup crumbled feta, optional
- 1 small garlic clove, grated
- 1 tablespoon lemon juice
- 1/2 tablespoon olive oil
- 1/8 teaspoon salt
- 2 tablespoons chopped parsley or mint
Steps
- In a medium bowl, combine minced onion, garlic, parsley, spices, salt, and pepper.
- Add ground lamb and gently mix by hand until just combined and slightly tacky; do not overwork.
- Cover and refrigerate for 20–30 minutes.
- Divide the lamb mixture into 8 equal portions and press onto skewers, forming logs about 3/4-1 inch thick and 5-6 inches long.
- To grill: preheat grill to medium-high heat and cook skewers, turning occasionally, until browned and cooked through, about 8-10 minutes.
- To bake: preheat oven to 400°F (200°C) and bake skewers on a lined tray for 15-20 minutes, until cooked through.
- For the yogurt sauce, mix Greek yogurt, feta, grated garlic, lemon juice, olive oil, salt, and chopped parsley or mint in a small bowl.
- Serve the lamb kofta warm with the yogurt sauce.
Notes
7 spice is a Lebanese/Middle Eastern spice blend; feta in the yogurt sauce is optional.
