Lamb Kofta (Kafta)

Ingredients

  • 1 small onion, finely minced
  • 3 garlic cloves, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon 7 spice blend
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound ground lamb
  • 1/2 cup plain Greek yogurt
  • 1/4 cup crumbled feta, optional
  • 1 small garlic clove, grated
  • 1 tablespoon lemon juice
  • 1/2 tablespoon olive oil
  • 1/8 teaspoon salt
  • 2 tablespoons chopped parsley or mint

Steps

  1. In a medium bowl, combine minced onion, garlic, parsley, spices, salt, and pepper.
  2. Add ground lamb and gently mix by hand until just combined and slightly tacky; do not overwork.
  3. Cover and refrigerate for 20–30 minutes.
  4. Divide the lamb mixture into 8 equal portions and press onto skewers, forming logs about 3/4-1 inch thick and 5-6 inches long.
  5. To grill: preheat grill to medium-high heat and cook skewers, turning occasionally, until browned and cooked through, about 8-10 minutes.
  6. To bake: preheat oven to 400°F (200°C) and bake skewers on a lined tray for 15-20 minutes, until cooked through.
  7. For the yogurt sauce, mix Greek yogurt, feta, grated garlic, lemon juice, olive oil, salt, and chopped parsley or mint in a small bowl.
  8. Serve the lamb kofta warm with the yogurt sauce.

Notes

7 spice is a Lebanese/Middle Eastern spice blend; feta in the yogurt sauce is optional.
