Easy Homemade Spaghetti Sauce

Ingredients
- 1/4 cup extra virgin olive oil
- 1 medium yellow onion, grated
- 3 garlic cloves, minced
- 2 carrots, finely grated
- 28 oz canned crushed tomatoes
- 1/2 cup water (or pasta cooking water)
- Kosher salt and black pepper, to taste
- 1 tbsp dried oregano
- 1 tsp sweet Spanish paprika
- Pinch red pepper flakes (optional)
- 1/2 cup fresh basil, torn
- 1/2 cup fresh parsley, chopped
- 3/4 to 1 lb cooked pasta
Steps
- Heat olive oil in a large pan over medium heat until shimmering.
- Add onion, garlic, and grated carrots; cook about 5 minutes, stirring, until softened.
- Stir in crushed tomatoes and water. Season with salt and pepper.
- Add oregano, paprika, and red pepper flakes if using, then stir in the fresh basil and parsley.
- Bring to a boil, then reduce heat to low. Cover and simmer 15-20 minutes, adding more water if the sauce gets too thick.
- Stir in more fresh basil at the end if desired.
- If serving with pasta, add cooked pasta to the sauce and mix. Let it cook together over low heat for about 5 minutes.
