4th of July Cupcakes

Ingredients

  • 1½ cups sifted cake flour
  • ¼ teaspoon salt
  • 1½ teaspoons baking powder
  • ½ cup unsalted butter, softened
  • 1 cup granulated white sugar
  • 2 large eggs
  • ¼ cup vegetable oil
  • ½ cup buttermilk
  • 2 teaspoons vanilla extract
  • ½ tablespoon vinegar
  • red food color
  • blue food color
  • 8 ounces cream cheese
  • 4 ounces unsalted butter
  • 1 teaspoon vanilla extract
  • 4-6 cups powdered sugar

Steps

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. Sift together the cake flour, salt, and baking powder in a bowl; set aside.
  3. In a separate bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vegetable oil.
  5. Add the buttermilk, vanilla extract, and vinegar, mixing until combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Divide the batter into three portions; leave one plain, color one red, and color one blue.
  8. Spoon small amounts of each colored batter into cupcake liners, alternating colors to create a marbled effect.
  9. Bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cupcakes cool completely before frosting.
  11. For the frosting, beat the cream cheese and butter together until smooth.
  12. Add the vanilla extract and gradually mix in the powdered sugar until the frosting reaches a smooth, spreadable consistency.
  13. Frost the cooled cupcakes with the cream cheese frosting and decorate as desired.

Notes

Red and blue food coloring create the patriotic marbled effect; adjust powdered sugar amount to achieve desired frosting consistency.
