Ingredients
- 1½ cups sifted cake flour
- ¼ teaspoon salt
- 1½ teaspoons baking powder
- ½ cup unsalted butter, softened
- 1 cup granulated white sugar
- 2 large eggs
- ¼ cup vegetable oil
- ½ cup buttermilk
- 2 teaspoons vanilla extract
- ½ tablespoon vinegar
- red food color
- blue food color
- 8 ounces cream cheese
- 4 ounces unsalted butter
- 1 teaspoon vanilla extract
- 4-6 cups powdered sugar
Steps
- Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- Sift together the cake flour, salt, and baking powder in a bowl; set aside.
- In a separate bowl, cream the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then mix in the vegetable oil.
- Add the buttermilk, vanilla extract, and vinegar, mixing until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Divide the batter into three portions; leave one plain, color one red, and color one blue.
- Spoon small amounts of each colored batter into cupcake liners, alternating colors to create a marbled effect.
- Bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, beat the cream cheese and butter together until smooth.
- Add the vanilla extract and gradually mix in the powdered sugar until the frosting reaches a smooth, spreadable consistency.
- Frost the cooled cupcakes with the cream cheese frosting and decorate as desired.
Notes
Red and blue food coloring create the patriotic marbled effect; adjust powdered sugar amount to achieve desired frosting consistency.
