Focaccia Sandwiches with Arugula, Roasted Red Peppers, and Goat Cheese

Ingredients
- 1 (2 pound) focaccia bread, store bought or homemade
- 1/2 small red onion, thinly sliced
- 1 tablespoon red wine vinegar
- 1/8 teaspoon kosher salt
- 4 ounces goat cheese (chevre)
- 10 ounces roasted red peppers, cut into strips
- 2 tablespoons capers
- 2 ounces arugula
- 1 teaspoon olive oil
- Freshly cracked black pepper
Steps
- Heat oven to 350°F and warm the focaccia on a sheet pan for 10 to 15 minutes.
- While the bread warms, toss the sliced red onion with salt and red wine vinegar in a small bowl; set aside to quick pickle.
- Remove the focaccia from the oven, transfer to a cutting board, and slice in half horizontally.
- Crumble goat cheese over one half of the bread and spread it out with a knife.
- Top the cheese with roasted red pepper strips, capers, and arugula.
- Sprinkle the pickled onions over the arugula.
- Stir the olive oil and black pepper into the remaining vinegar from the onion bowl, then pour it over the arugula.
- Top with the other half of the bread, slice into 8 sandwiches, and serve.
