Focaccia Sandwiches with Arugula, Roasted Red Peppers, and Goat Cheese

Ingredients

  • 1 (2 pound) focaccia bread, store bought or homemade
  • 1/2 small red onion, thinly sliced
  • 1 tablespoon red wine vinegar
  • 1/8 teaspoon kosher salt
  • 4 ounces goat cheese (chevre)
  • 10 ounces roasted red peppers, cut into strips
  • 2 tablespoons capers
  • 2 ounces arugula
  • 1 teaspoon olive oil
  • Freshly cracked black pepper

Steps

  1. Heat oven to 350°F and warm the focaccia on a sheet pan for 10 to 15 minutes.
  2. While the bread warms, toss the sliced red onion with salt and red wine vinegar in a small bowl; set aside to quick pickle.
  3. Remove the focaccia from the oven, transfer to a cutting board, and slice in half horizontally.
  4. Crumble goat cheese over one half of the bread and spread it out with a knife.
  5. Top the cheese with roasted red pepper strips, capers, and arugula.
  6. Sprinkle the pickled onions over the arugula.
  7. Stir the olive oil and black pepper into the remaining vinegar from the onion bowl, then pour it over the arugula.
  8. Top with the other half of the bread, slice into 8 sandwiches, and serve.
