Baked Cod with Lemon and Garlic

Ingredients

  • 1.5 lb cod fillets (4-6 pieces)
  • 1/4 cup fresh parsley, chopped
  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 2 tbsp butter, melted
  • 5 garlic cloves, minced
  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Steps

  1. Preheat oven to 400°F (200°C).
  2. In a shallow bowl, mix lemon juice, olive oil, and melted butter. Set aside (do not add garlic yet).
  3. In another shallow bowl, mix flour, coriander, paprika, cumin, salt, and pepper.
  4. Pat fish dry. Dip each piece in the lemon mixture, then coat in the flour mixture, shaking off excess. Reserve remaining lemon mixture.
  5. Heat a little olive oil in a cast iron or oven-safe skillet over medium-high heat until shimmering.
  6. Sear fish about 2 minutes per side to lightly color, without fully cooking. Remove skillet from heat.
  7. Stir minced garlic into the reserved lemon mixture and drizzle over the fish.
  8. Bake in the preheated oven about 10 minutes, until fish flakes easily with a fork.
  9. Remove from oven, sprinkle with chopped parsley, and serve immediately.
