Baked Cod with Lemon and Garlic

Ingredients
- 1.5 lb cod fillets (4-6 pieces)
- 1/4 cup fresh parsley, chopped
- 5 tbsp fresh lemon juice
- 5 tbsp extra virgin olive oil
- 2 tbsp butter, melted
- 5 garlic cloves, minced
- 1/3 cup all-purpose flour
- 1 tsp ground coriander
- 3/4 tsp sweet Spanish paprika
- 3/4 tsp ground cumin
- 3/4 tsp salt
- 1/2 tsp black pepper
Steps
- Preheat oven to 400°F (200°C).
- In a shallow bowl, mix lemon juice, olive oil, and melted butter. Set aside (do not add garlic yet).
- In another shallow bowl, mix flour, coriander, paprika, cumin, salt, and pepper.
- Pat fish dry. Dip each piece in the lemon mixture, then coat in the flour mixture, shaking off excess. Reserve remaining lemon mixture.
- Heat a little olive oil in a cast iron or oven-safe skillet over medium-high heat until shimmering.
- Sear fish about 2 minutes per side to lightly color, without fully cooking. Remove skillet from heat.
- Stir minced garlic into the reserved lemon mixture and drizzle over the fish.
- Bake in the preheated oven about 10 minutes, until fish flakes easily with a fork.
- Remove from oven, sprinkle with chopped parsley, and serve immediately.
