Lemon Dill Salmon with Creamy Dill Sauce

Ingredients
- 1 1/2 pounds salmon, cut into 6 (4-ounce) fillets
- 1 tablespoon extra virgin olive oil
- Salt
- Freshly ground black pepper
- Lemon wedges, to serve
- 1/2 cup Greek yogurt
- 1 tablespoon extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 garlic clove, crushed or finely grated
- 2 tablespoons fresh dill, chopped (plus extra fronds for garnish)
- 1/2 teaspoon dried dill
- 1 teaspoon lemon juice
- 1/4 cup hot water, plus extra as needed
- Salt
- Freshly ground pepper
Steps
- Position an oven rack about 6 inches from the broiler and set broiler to high.
- Pat salmon fillets dry and arrange on a foil-lined baking sheet. Drizzle with olive oil, rub to coat, and season with salt and pepper.
- Broil salmon for 4 to 6 minutes, until opaque, slightly crisp on top, and flakes easily with a fork.
- Meanwhile, whisk together Greek yogurt, olive oil, and Dijon mustard until smooth.
- Stir in garlic, fresh dill, and dried dill, then whisk in lemon juice.
- Slowly whisk in hot water until sauce reaches desired consistency, adding more water if needed. Season with salt and pepper.
- Transfer salmon to a platter and spoon sauce over top or serve on the side. Garnish with dill fronds and lemon wedges.
