Lemon Dill Salmon with Creamy Dill Sauce

Ingredients

  • 1 1/2 pounds salmon, cut into 6 (4-ounce) fillets
  • 1 tablespoon extra virgin olive oil
  • Salt
  • Freshly ground black pepper
  • Lemon wedges, to serve
  • 1/2 cup Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, crushed or finely grated
  • 2 tablespoons fresh dill, chopped (plus extra fronds for garnish)
  • 1/2 teaspoon dried dill
  • 1 teaspoon lemon juice
  • 1/4 cup hot water, plus extra as needed
  • Salt
  • Freshly ground pepper

Steps

  1. Position an oven rack about 6 inches from the broiler and set broiler to high.
  2. Pat salmon fillets dry and arrange on a foil-lined baking sheet. Drizzle with olive oil, rub to coat, and season with salt and pepper.
  3. Broil salmon for 4 to 6 minutes, until opaque, slightly crisp on top, and flakes easily with a fork.
  4. Meanwhile, whisk together Greek yogurt, olive oil, and Dijon mustard until smooth.
  5. Stir in garlic, fresh dill, and dried dill, then whisk in lemon juice.
  6. Slowly whisk in hot water until sauce reaches desired consistency, adding more water if needed. Season with salt and pepper.
  7. Transfer salmon to a platter and spoon sauce over top or serve on the side. Garnish with dill fronds and lemon wedges.
