Filipino-Style Pasta Carbonara

Ingredients
- 1 pound spaghetti
- 2 pounds bacon, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 pound baby bella mushrooms, thinly sliced
- 2 tablespoons butter
- 1 tablespoon flour
- 1 cup chicken broth
- 14 ounces all-purpose cream
- 2 tablespoons Parmesan cheese, plus more for serving
- 1 teaspoon freshly grated nutmeg
- salt and pepper, to taste
- 1/4 cup fresh parsley, chopped
Steps
- Bring about 4 quarts salted water to a boil in a large pot. Cook spaghetti 1 minute less than package directions, then drain and keep warm.
- In a wide pan over medium heat, cook bacon until browned and crisp. Remove with a slotted spoon and drain on paper towels.
- Discard rendered fat, leaving about 1 tablespoon in the pan. Add onion and garlic and cook until softened.
- Add mushrooms and cook until softened. Remove mushroom mixture with a slotted spoon and keep warm.
- Add butter to the pan and melt. Stir in flour and cook 1-2 minutes until smooth and lightly browned.
- Slowly whisk in chicken broth to prevent lumps.
- Add cream, lower heat, and simmer, whisking occasionally, until slightly thickened.
- Stir in Parmesan cheese and nutmeg. Season with salt and pepper to taste.
- Add cooked pasta, bacon, and mushroom mixture. Toss until pasta is coated with sauce and heated through.
- Garnish with fresh parsley and additional Parmesan cheese. Serve hot.
