Filipino-Style Pasta Carbonara

Ingredients

  • 1 pound spaghetti
  • 2 pounds bacon, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound baby bella mushrooms, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 14 ounces all-purpose cream
  • 2 tablespoons Parmesan cheese, plus more for serving
  • 1 teaspoon freshly grated nutmeg
  • salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped

Steps

  1. Bring about 4 quarts salted water to a boil in a large pot. Cook spaghetti 1 minute less than package directions, then drain and keep warm.
  2. In a wide pan over medium heat, cook bacon until browned and crisp. Remove with a slotted spoon and drain on paper towels.
  3. Discard rendered fat, leaving about 1 tablespoon in the pan. Add onion and garlic and cook until softened.
  4. Add mushrooms and cook until softened. Remove mushroom mixture with a slotted spoon and keep warm.
  5. Add butter to the pan and melt. Stir in flour and cook 1-2 minutes until smooth and lightly browned.
  6. Slowly whisk in chicken broth to prevent lumps.
  7. Add cream, lower heat, and simmer, whisking occasionally, until slightly thickened.
  8. Stir in Parmesan cheese and nutmeg. Season with salt and pepper to taste.
  9. Add cooked pasta, bacon, and mushroom mixture. Toss until pasta is coated with sauce and heated through.
  10. Garnish with fresh parsley and additional Parmesan cheese. Serve hot.
