Tzatziki Sauce

Ingredients
- 3/4 English cucumber, partially peeled and grated
- 1 teaspoon kosher salt, divided
- 4 to 5 garlic cloves, minced
- 1 teaspoon white vinegar
- 1 tablespoon extra virgin olive oil, plus more for serving
- 2 cups plain Greek yogurt
- Handful chopped fresh dill or mint (optional)
- 1/4 teaspoon ground white pepper
- Warm pita bread, for serving
- Sliced vegetables, for serving
Steps
- Grate the cucumber using a box grater or food processor. Toss with 1/2 teaspoon kosher salt.
- Spoon the grated cucumber into a cheesecloth or thick napkin and squeeze out excess liquid.
- In a large bowl, mix the minced garlic with the remaining 1/2 teaspoon salt, white vinegar, and olive oil.
- Add the squeezed cucumber, yogurt, and white pepper to the garlic mixture. Stir to combine, adding fresh herbs if using.
- Cover and refrigerate for 30 minutes to a couple hours to let the flavors meld and sauce thicken.
- Stir before serving, transfer to a bowl, and drizzle with more olive oil if desired. Serve with pita bread or vegetables.
Notes
Squeezing the cucumber well prevents a watery sauce. Chilling time improves texture and flavor.
