Tzatziki Sauce

Ingredients

  • 3/4 English cucumber, partially peeled and grated
  • 1 teaspoon kosher salt, divided
  • 4 to 5 garlic cloves, minced
  • 1 teaspoon white vinegar
  • 1 tablespoon extra virgin olive oil, plus more for serving
  • 2 cups plain Greek yogurt
  • Handful chopped fresh dill or mint (optional)
  • 1/4 teaspoon ground white pepper
  • Warm pita bread, for serving
  • Sliced vegetables, for serving

Steps

  1. Grate the cucumber using a box grater or food processor. Toss with 1/2 teaspoon kosher salt.
  2. Spoon the grated cucumber into a cheesecloth or thick napkin and squeeze out excess liquid.
  3. In a large bowl, mix the minced garlic with the remaining 1/2 teaspoon salt, white vinegar, and olive oil.
  4. Add the squeezed cucumber, yogurt, and white pepper to the garlic mixture. Stir to combine, adding fresh herbs if using.
  5. Cover and refrigerate for 30 minutes to a couple hours to let the flavors meld and sauce thicken.
  6. Stir before serving, transfer to a bowl, and drizzle with more olive oil if desired. Serve with pita bread or vegetables.

Notes

Squeezing the cucumber well prevents a watery sauce. Chilling time improves texture and flavor.
