Grilled Eggplant with Whipped Feta

Ingredients
- 1 globe eggplant, sliced into 1/2-inch rounds
- kosher salt
- 3 tablespoons extra virgin olive oil
- extra virgin olive oil, for brushing
- 2 garlic cloves, minced
- 1 lemon, juiced
- 1 jalapeno, finely chopped (ribs and seeds removed for less heat)
- 1 to 2 teaspoons sumac
- whipped feta, for serving (optional)
- warm pita bread, for serving
Steps
- Lay eggplant slices on a paper towel-lined tray and salt generously. Let sit 20 to 30 minutes until beads of water form.
- Wipe eggplant dry and remove excess salt.
- In a small bowl, combine 3 tablespoons olive oil, lemon juice, garlic, and jalapeno. Add a pinch of salt and set aside.
- Heat a gas grill or indoor griddle to medium-high and lightly oil the grates.
- Brush one side of the eggplant slices with olive oil.
- Place eggplant on the grill, oiled side down, and cook 3 to 4 minutes until char marks form.
- Brush the top side with olive oil, flip, and cook another 3 to 4 minutes until tender and charred on both sides.
- Arrange grilled eggplant on a platter and season immediately with sumac.
- Drizzle the olive oil, lemon, garlic, and jalapeno mixture over the eggplant.
- Serve with whipped feta and warm pita bread.
Notes
Whipped feta can be made separately as a side accompaniment.
