Grilled Chicken Tenders

Ingredients

  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 2 tablespoons lemon juice (about 1 lemon)
  • 1 tablespoon fresh thyme, minced (or 1 teaspoon dried)
  • 1 tablespoon fresh oregano, minced (or 1 teaspoon dried)
  • 1 tablespoon fresh rosemary, minced (or 1 teaspoon dried)
  • 1 tablespoon fresh parsley, minced (or 1 teaspoon dried)
  • 1/2 teaspoon ground cumin
  • 1 teaspoon red pepper flakes (optional)
  • paprika, to taste
  • 2 pounds chicken tenders
  • salt and black pepper, to taste

Steps

  1. Preheat the grill to medium-high, about 375-400°F (190-205°C).
  2. In a small bowl, mix olive oil, garlic, paprika, lemon juice, thyme, oregano, rosemary, parsley, cumin, and red pepper flakes.
  3. Season chicken tenders with salt and pepper, then place in a shallow dish or resealable bag.
  4. Pour marinade over chicken and stir to coat evenly. Marinate for 30 minutes if time allows, or grill immediately.
  5. Lightly grease the grill grates with cooking spray or oil to prevent sticking.
  6. Remove chicken from marinade, shaking off excess. If using marinade as a sauce, simmer it first to kill bacteria.
  7. Grill chicken tenders for 3-4 minutes per side, until internal temperature reaches 165°F (75°C).
  8. Remove from grill and let rest for 5 minutes before serving.
  9. Garnish with fresh parsley if desired, and serve.
