Arayes (Middle Eastern Stuffed Pita)

Ingredients

  • 1 lb extra lean ground beef
  • 5 garlic cloves, peeled
  • 1/2 onion, peeled and quartered
  • 1/2 cup parsley, packed
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon seven spice (or allspice)
  • 2 tablespoons pomegranate molasses
  • 2 tablespoons olive oil (for the meat)
  • 2-3 tablespoons olive oil (for the pitas)
  • 4 small round pitas (4 inch)

Steps

  1. Preheat oven to 400°F if baking.
  2. Finely chop or process the onion, garlic, and parsley until fine, then squeeze out excess moisture using your hands or a cheesecloth.
  3. Mix the ground beef with the onion mixture, spices, pomegranate molasses, and olive oil until well combined.
  4. Cut pitas in half to form pockets. Stuff each pocket with 1.5 to 2 tablespoons of the meat mixture, pressing down to flatten and fill to the edges.
  5. Brush the outside of each stuffed pita with olive oil on both sides.
  6. To grill: cook the stuffed pitas on a preheated grill over medium-high heat for about 3-4 minutes per side, until the meat is cooked through and the pita is crisp and golden.
  7. To bake: place the stuffed pitas on a baking sheet and bake in the preheated oven for about 12-15 minutes, flipping halfway, until the meat is cooked through and the pita is golden and crisp.

Notes

Seven spice can be substituted with allspice. Pomegranate molasses adds a tangy sweetness typical of Levantine cooking.
