Maqluba (Makloubeh) with Lamb

Ingredients
- 600-900 g lamb or veal pieces
- 2 tablespoons vegetable oil
- 2 cinnamon sticks
- 4 pods green cardamom
- 3 bay leaves
- 4 whole allspice or black peppercorns
- 4 whole cloves
- 1/2 teaspoon turmeric
- 4 tablespoons tomato paste
- 3.5 teaspoons salt
- 1.5 teaspoons black pepper
- 3 cups water
- 2 eggplants (about 700g)
- 1/2 teaspoon salt
- 4 tablespoons vegetable oil
- 2 large potatoes
- 1/4 teaspoon salt
- 1 tablespoon vegetable oil
- 1 large onion
- 1 large red or orange bell pepper
- 1/4 teaspoon salt
- 2 tablespoons vegetable oil
- 2.5 cups basmati rice
- 5.5 cups liquid (meat broth plus water)
- 1 tomato
- 1/2 cup slivered or blanched almonds (or pine nuts)
- 1/2 cup chopped parsley
Steps
- Preheat the oven to 450°F (230°C).
- Wash the eggplant, peel every other stripe, and cut into half-inch thick slices.
- Wash and peel the potatoes, then cut into half-inch thick rounds.
- Place eggplant and potato on a lined baking sheet, sprinkle with salt, toss with oil, and bake for 30 minutes.
- Wash the meat and sear it in 2 tablespoons of oil over medium-high heat.
- Add 3 cups of water and all whole spices. Pressure cook for 10 minutes, or simmer covered on the stovetop for 40-60 minutes until tender.
- Cut the onion and bell pepper into slices, then cook in oil over medium heat for 7 minutes until softened. Set aside.
- Remove the cooked meat and strain the stock, discarding the whole spices.
- Add turmeric, salt, black pepper, and tomato paste to the hot stock. Mix well and top up with water to reach 5.5 cups total.
- Wash the rice several times until the water runs clear, then drain.
- Cut the tomato into slices.
- In the cooking pot, add 2 tablespoons of oil, then layer the tomato slices, eggplant, potato, meat, onions and peppers, and finally the rice.
- Pat the rice down firmly, then pour the seasoned stock over the top, ensuring it fully covers the rice.
- Place the pot over medium-high heat until it starts bubbling, about 5 minutes.
- Cover the pot tightly, using a towel under the lid if needed, reduce heat to low, and cook for 50 minutes.
- Turn off the heat and let the maqluba rest for 5-10 minutes.
- Place a large tray with raised edges over the pot, hold firmly, and flip the pot over in one swift motion.
- Leave the pot inverted over the tray for a few minutes to let the maqluba settle, then carefully lift the pot away.
- Serve with yogurt or jajik.
Notes
Traditionally served upside-down, showing the layered rice, meat, and vegetables. Best enjoyed with a side of plain yogurt or jajik.
