Ground Chicken Burgers (Kofta Style)

Ingredients

  • 454 g ground chicken
  • 2 tablespoons mayonnaise
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon ketchup
  • 2 garlic cloves, minced
  • 1/2 yellow onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/2 cup dry unseasoned breadcrumbs
  • 1 egg
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons neutral oil, for frying
  • 4 buns
  • 1/2 head romaine lettuce
  • 1 tomato, sliced (optional)
  • 1/4 red onion, thinly sliced (optional)

Steps

  1. In a medium bowl, combine ground chicken, mayonnaise, olive oil, ketchup, garlic, onion, parsley, breadcrumbs, egg, onion powder, garlic powder, paprika, coriander, cumin, curry powder, salt, and pepper. Mix until well combined.
  2. Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick using wet hands. Place on a tray.
  3. Heat neutral oil in a skillet over medium heat. Fry patties for 5-7 minutes per side until golden and cooked through, reaching an internal temperature of 165°F.
  4. Serve on buns with desired toppings and condiments.

Notes

Spice blend (cumin, coriander, curry powder) gives these burgers a kofta-inspired flavor, though the format is a classic American-style burger.
