Ground Chicken Burgers (Kofta Style)

Ingredients
- 454 g ground chicken
- 2 tablespoons mayonnaise
- 1 tablespoon extra virgin olive oil
- 1 tablespoon ketchup
- 2 garlic cloves, minced
- 1/2 yellow onion, finely chopped
- 1/4 cup parsley, chopped
- 1/2 cup dry unseasoned breadcrumbs
- 1 egg
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/4 teaspoon curry powder
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons neutral oil, for frying
- 4 buns
- 1/2 head romaine lettuce
- 1 tomato, sliced (optional)
- 1/4 red onion, thinly sliced (optional)
Steps
- In a medium bowl, combine ground chicken, mayonnaise, olive oil, ketchup, garlic, onion, parsley, breadcrumbs, egg, onion powder, garlic powder, paprika, coriander, cumin, curry powder, salt, and pepper. Mix until well combined.
- Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick using wet hands. Place on a tray.
- Heat neutral oil in a skillet over medium heat. Fry patties for 5-7 minutes per side until golden and cooked through, reaching an internal temperature of 165°F.
- Serve on buns with desired toppings and condiments.
Notes
Spice blend (cumin, coriander, curry powder) gives these burgers a kofta-inspired flavor, though the format is a classic American-style burger.
