Sheet Pan Rainbow Trout with Potatoes

Ingredients
- 3 medium potatoes, peeled and cut into 1/4 inch wedges
- 2 tablespoons extra virgin olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt
- 700 g rainbow trout fillets (about 2 large fillets)
- 1 1/2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried dill
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt
Steps
- Preheat oven to 450°F and line a sheet pan with parchment paper.
- Toss potato wedges with olive oil, onion powder, garlic powder, paprika, black pepper, and salt.
- Spread potatoes in a single layer on the sheet pan and bake for 30 minutes.
- Pat trout fillets dry, drizzle with olive oil, and rub with garlic powder, paprika, dill, onion powder, black pepper, and salt.
- After potatoes have baked 30 minutes, flip them and push to one side of the pan.
- Place seasoned trout fillets on the other side of the pan.
- Bake for an additional 15 minutes, until fish is fully cooked.
- Serve with steamed broccoli or another vegetable of choice.
Notes
Cut potatoes thin (about 1/4 inch) so they cook fully within the baking time.
