Sheet Pan Rainbow Trout with Potatoes

Ingredients

  • 3 medium potatoes, peeled and cut into 1/4 inch wedges
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 700 g rainbow trout fillets (about 2 large fillets)
  • 1 1/2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt

Steps

  1. Preheat oven to 450°F and line a sheet pan with parchment paper.
  2. Toss potato wedges with olive oil, onion powder, garlic powder, paprika, black pepper, and salt.
  3. Spread potatoes in a single layer on the sheet pan and bake for 30 minutes.
  4. Pat trout fillets dry, drizzle with olive oil, and rub with garlic powder, paprika, dill, onion powder, black pepper, and salt.
  5. After potatoes have baked 30 minutes, flip them and push to one side of the pan.
  6. Place seasoned trout fillets on the other side of the pan.
  7. Bake for an additional 15 minutes, until fish is fully cooked.
  8. Serve with steamed broccoli or another vegetable of choice.

Notes

Cut potatoes thin (about 1/4 inch) so they cook fully within the baking time.
