Sheet Pan Kebabs (Ground Beef)

🇮🇶 Iraq

Servings: 6 Prep: 15 minutes Cook: 40 minutes Total: 55 minutes

Ingredients

  • 2 medium yellow onions, roughly chopped
  • 1 cup parsley, roughly chopped
  • 2 garlic cloves
  • 1 bell pepper, roughly chopped
  • 1 3/4 lb ground beef
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 1/4 cups all-purpose flour
  • 1 cup tomato passata
  • 1/4 cup tomato paste
  • 1/2 teaspoon baking powder
  • 4 tablespoons vegetable oil
  • 6 samoon buns or pita bread
  • 2 tomatoes, sliced
  • 3 green onions, sliced
  • 1/4 cup parsley, roughly chopped

Steps

  1. Preheat the oven to 450°F with a rack positioned at the bottom.
  2. In a food processor, pulse the onions, parsley, garlic, and bell pepper until finely chopped.
  3. Transfer the mixture to a large bowl. Add ground beef, salt, pepper, flour, tomato passata, tomato paste, and baking powder. Mix by hand until a cohesive, soft dough forms.
  4. Line two rimmed sheet pans with parchment paper, add 2 tablespoons of oil to each, and spread with your hands. Preheat the pans in the oven for 10 minutes.
  5. Shape 1-2 tablespoons of the meat mixture into a patty about 1/4 inch thick, and place on the hot sheet pan. Repeat, spacing patties 1 inch apart.
  6. Bake on the bottom rack for 20 minutes. If using two pans, rotate the top pan to the bottom for the last 10 minutes to help caramelize the patties.
  7. Check that the bottoms of the patties are browned and crispy; bake 5 more minutes if needed. Flip and bake another 15 minutes until both sides are golden. Broil briefly to brown further if desired.
  8. Serve as sandwiches in samoon buns with sliced tomatoes, green onions, and parsley.
