Sheet Pan Kebabs (Ground Beef)

Ingredients
- 2 medium yellow onions, roughly chopped
- 1 cup parsley, roughly chopped
- 2 garlic cloves
- 1 bell pepper, roughly chopped
- 1 3/4 lb ground beef
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 1 1/4 cups all-purpose flour
- 1 cup tomato passata
- 1/4 cup tomato paste
- 1/2 teaspoon baking powder
- 4 tablespoons vegetable oil
- 6 samoon buns or pita bread
- 2 tomatoes, sliced
- 3 green onions, sliced
- 1/4 cup parsley, roughly chopped
Steps
- Preheat the oven to 450°F with a rack positioned at the bottom.
- In a food processor, pulse the onions, parsley, garlic, and bell pepper until finely chopped.
- Transfer the mixture to a large bowl. Add ground beef, salt, pepper, flour, tomato passata, tomato paste, and baking powder. Mix by hand until a cohesive, soft dough forms.
- Line two rimmed sheet pans with parchment paper, add 2 tablespoons of oil to each, and spread with your hands. Preheat the pans in the oven for 10 minutes.
- Shape 1-2 tablespoons of the meat mixture into a patty about 1/4 inch thick, and place on the hot sheet pan. Repeat, spacing patties 1 inch apart.
- Bake on the bottom rack for 20 minutes. If using two pans, rotate the top pan to the bottom for the last 10 minutes to help caramelize the patties.
- Check that the bottoms of the patties are browned and crispy; bake 5 more minutes if needed. Flip and bake another 15 minutes until both sides are golden. Broil briefly to brown further if desired.
- Serve as sandwiches in samoon buns with sliced tomatoes, green onions, and parsley.
