Sour Cherry Mug Cake (Bögrés Süti)

Ingredients
- 2 cups sugar
- 4 eggs
- 1 cup (150 g) kefir
- 1 cup oil
- 3 cups flour
- 1 packet baking powder
- 1 packet vanilla sugar
- butter, for the pan
- 1 kg sour cherries, pitted
- powdered sugar, for dusting
Steps
- In a large bowl, beat the sugar and eggs until fluffy.
- Mix in the kefir and oil.
- Sift together the flour and baking powder, stir in the vanilla sugar, then gradually fold into the egg mixture until well combined.
- Lightly grease a large baking pan with butter and line it with parchment paper, smoothing it out.
- Pour the batter into the pan and scatter the rinsed, pitted sour cherries over the top.
- Bake in a preheated oven at 180°C (356°F) for about 30 minutes, checking doneness with a toothpick.
- Let cool, dust with powdered sugar, cut into squares, and serve.
