Sour Cherry Mug Cake (Bögrés Süti)

Ingredients

  • 2 cups sugar
  • 4 eggs
  • 1 cup (150 g) kefir
  • 1 cup oil
  • 3 cups flour
  • 1 packet baking powder
  • 1 packet vanilla sugar
  • butter, for the pan
  • 1 kg sour cherries, pitted
  • powdered sugar, for dusting

Steps

  1. In a large bowl, beat the sugar and eggs until fluffy.
  2. Mix in the kefir and oil.
  3. Sift together the flour and baking powder, stir in the vanilla sugar, then gradually fold into the egg mixture until well combined.
  4. Lightly grease a large baking pan with butter and line it with parchment paper, smoothing it out.
  5. Pour the batter into the pan and scatter the rinsed, pitted sour cherries over the top.
  6. Bake in a preheated oven at 180°C (356°F) for about 30 minutes, checking doneness with a toothpick.
  7. Let cool, dust with powdered sugar, cut into squares, and serve.
