Cheesy Baked Pasta

Ingredients

  • 500 g mixed vegetables
  • Salt
  • 300 g small pasta (elbow or shell shape)
  • 250 g cream cheese
  • 3 eggs
  • 1 clove garlic
  • 1 small bunch parsley
  • 1 small bunch basil
  • 50 g butter
  • 200 g grated cheese

Steps

  1. Clean, peel if needed, and chop the vegetables. Boil in lightly salted water for 3-5 minutes until crisp-tender, then drain and set aside.
  2. Cook the pasta in salted water until just tender but not overcooked. Drain and let cool slightly.
  3. In a large bowl, mix the cream cheese with the eggs until smooth. Add the crushed garlic, chopped parsley, and torn basil leaves. Season with a pinch of salt.
  4. Fold the cooled vegetables into the cream cheese mixture, then add the cooked pasta. Mix gently but thoroughly until everything is evenly coated.
  5. Grease a medium baking dish generously with butter. Pour in the pasta mixture and spread evenly. Sprinkle the grated cheese on top and dot with the remaining butter.
  6. Bake in a preheated oven at 180°C (350°F) for about 35 minutes, until golden brown and the cheese on top is melted and slightly crisp.
  7. Serve with fresh salad or pickles. Also good reheated the next day.

Notes

Leftovers reheat well and make a great next-day lunch.
