Cheesy Baked Pasta

Ingredients
- 500 g mixed vegetables
- Salt
- 300 g small pasta (elbow or shell shape)
- 250 g cream cheese
- 3 eggs
- 1 clove garlic
- 1 small bunch parsley
- 1 small bunch basil
- 50 g butter
- 200 g grated cheese
Steps
- Clean, peel if needed, and chop the vegetables. Boil in lightly salted water for 3-5 minutes until crisp-tender, then drain and set aside.
- Cook the pasta in salted water until just tender but not overcooked. Drain and let cool slightly.
- In a large bowl, mix the cream cheese with the eggs until smooth. Add the crushed garlic, chopped parsley, and torn basil leaves. Season with a pinch of salt.
- Fold the cooled vegetables into the cream cheese mixture, then add the cooked pasta. Mix gently but thoroughly until everything is evenly coated.
- Grease a medium baking dish generously with butter. Pour in the pasta mixture and spread evenly. Sprinkle the grated cheese on top and dot with the remaining butter.
- Bake in a preheated oven at 180°C (350°F) for about 35 minutes, until golden brown and the cheese on top is melted and slightly crisp.
- Serve with fresh salad or pickles. Also good reheated the next day.
Notes
Leftovers reheat well and make a great next-day lunch.
