Classic Green Pea Stew (Zöldborsófőzelék)

Ingredients
- 50 g butter
- 2 tbsp vegetable oil
- 450 g green peas (frozen)
- 1 pinch baking soda
- 1/2 bunch parsley, chopped
- 1 tsp salt
- 1 pinch sugar
- 3 tbsp flour
- 750 ml water
- 50 ml cream
- 4 eggs
Steps
- Heat the butter and oil in a pot over medium heat, then add the frozen peas.
- Stir until the peas thaw, then sprinkle with baking soda and chopped parsley.
- Cover and simmer, stirring occasionally, until the peas are just tender.
- Season with salt and sugar.
- Meanwhile, bring the water to a boil in a separate pot.
- Once the peas are cooked, sprinkle with flour, mix well, and cook for about 30 seconds.
- Pour in the hot water and stir until any flour clumps dissolve.
- Add the cream, stir well, and bring back to a boil.
- If the stew is too thick, add a little more water or milk to thin it.
- Fry the eggs individually in a muffin tin until set.
- Serve the pea stew topped with a fried egg.
Notes
Traditionally served with a fried egg cooked in a muffin tin for a neat, round shape.
