Classic Green Pea Stew (Zöldborsófőzelék)

Ingredients

  • 50 g butter
  • 2 tbsp vegetable oil
  • 450 g green peas (frozen)
  • 1 pinch baking soda
  • 1/2 bunch parsley, chopped
  • 1 tsp salt
  • 1 pinch sugar
  • 3 tbsp flour
  • 750 ml water
  • 50 ml cream
  • 4 eggs

Steps

  1. Heat the butter and oil in a pot over medium heat, then add the frozen peas.
  2. Stir until the peas thaw, then sprinkle with baking soda and chopped parsley.
  3. Cover and simmer, stirring occasionally, until the peas are just tender.
  4. Season with salt and sugar.
  5. Meanwhile, bring the water to a boil in a separate pot.
  6. Once the peas are cooked, sprinkle with flour, mix well, and cook for about 30 seconds.
  7. Pour in the hot water and stir until any flour clumps dissolve.
  8. Add the cream, stir well, and bring back to a boil.
  9. If the stew is too thick, add a little more water or milk to thin it.
  10. Fry the eggs individually in a muffin tin until set.
  11. Serve the pea stew topped with a fried egg.

Notes

Traditionally served with a fried egg cooked in a muffin tin for a neat, round shape.
