Spicy Mayonnaise Corn Salad

Ingredients

  • 100 g red onion
  • 1 bunch parsley
  • 600 g canned corn
  • 4 tbsp mayonnaise
  • 3 tbsp sour cream
  • 1 tbsp mustard
  • 1 tbsp sriracha hot sauce
  • salt
  • pepper

Steps

  1. Peel the red onion and cut into larger pieces; finely chop the parsley.
  2. In a large bowl, mix the mayonnaise, sour cream, mustard, and sriracha sauce.
  3. Add the chopped red onion and parsley to the mixture and combine well.
  4. Drain and rinse the canned corn, then add it to the bowl.
  5. Toss everything together until the corn is evenly coated with the spicy dressing.
  6. Season with salt and pepper to taste.
  7. Chill in the refrigerator briefly before serving to let the flavors combine.
