One-Pot Zucchini Pasta

Ingredients
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 zucchini, halved and sliced
- Salt
- Pepper
- 40 g pine nuts
- 300 g tube pasta
- 700 ml vegetable stock
- 200 ml cooking cream
- 120 g semi-hard cheese, grated
- 2 tbsp parmesan, grated
- 1 tsp lemon zest
- 1 tbsp parsley, chopped
Steps
- Heat the olive oil in a large, deep pan and sauté the minced garlic until fragrant.
- Add the sliced zucchini, season with salt and pepper, and cook for 5-6 minutes until golden brown.
- Meanwhile, toast the pine nuts in a dry pan until fragrant, then set aside.
- Add the dry pasta to the zucchini, pour in the vegetable stock and cooking cream, and stir well.
- Cook over medium heat, stirring occasionally, for 10-12 minutes until the pasta is tender, adding a little water if needed.
- Once the pasta is cooked, stir in the grated semi-hard cheese, parmesan, lemon zest, and chopped parsley until melted into a creamy sauce.
- Sprinkle the toasted pine nuts on top and serve immediately, optionally with extra pepper and parmesan.
