Lattice Strawberry Pie

Ingredients

  • 350 g flour
  • 1 tsp salt
  • 150 g butter, cold
  • 6 tbsp ice water
  • 500 g strawberries
  • 1/4 cup cornstarch
  • 1/4 cup sugar
  • 1/3 cup brown sugar
  • 2 tbsp lemon juice
  • 1 pinch salt
  • 1 egg white

Steps

  1. In a bowl, mix flour and salt, then cut in cold butter until pea-sized crumbs form.
  2. Add ice water a spoonful at a time, mixing until a workable dough forms.
  3. Wrap dough in plastic wrap and refrigerate for 1 hour.
  4. Preheat the oven to 220°C (425°F).
  5. Roll out the dough on a floured surface, place in a pie dish, and return to the refrigerator while preparing the filling.
  6. In a large bowl, combine strawberries, both sugars, cornstarch, and lemon juice; mix until slightly juicy.
  7. Remove the pie crust from the fridge, spread the strawberry filling over it, then roll out the remaining dough and arrange as a lattice top; decorate as desired.
  8. Brush the top with lightly beaten egg white and bake for 15 minutes.
  9. Reduce oven temperature to 195°C (380°F) and bake for another 45-50 minutes, covering with foil if browning too quickly. Remove from oven and let cool completely before serving.
