Lattice Strawberry Pie

Ingredients
- 350 g flour
- 1 tsp salt
- 150 g butter, cold
- 6 tbsp ice water
- 500 g strawberries
- 1/4 cup cornstarch
- 1/4 cup sugar
- 1/3 cup brown sugar
- 2 tbsp lemon juice
- 1 pinch salt
- 1 egg white
Steps
- In a bowl, mix flour and salt, then cut in cold butter until pea-sized crumbs form.
- Add ice water a spoonful at a time, mixing until a workable dough forms.
- Wrap dough in plastic wrap and refrigerate for 1 hour.
- Preheat the oven to 220°C (425°F).
- Roll out the dough on a floured surface, place in a pie dish, and return to the refrigerator while preparing the filling.
- In a large bowl, combine strawberries, both sugars, cornstarch, and lemon juice; mix until slightly juicy.
- Remove the pie crust from the fridge, spread the strawberry filling over it, then roll out the remaining dough and arrange as a lattice top; decorate as desired.
- Brush the top with lightly beaten egg white and bake for 15 minutes.
- Reduce oven temperature to 195°C (380°F) and bake for another 45-50 minutes, covering with foil if browning too quickly. Remove from oven and let cool completely before serving.
