Lángos (Hungarian Fried Dough)

Ingredients
- 500 g flour
- 3 dl milk
- 1 tablespoon sugar
- 20 g yeast
- 250 g potatoes
- salt
Steps
- Place the flour in a bowl and keep it in a warm place.
- Warm 1.5 dl of the milk, mix with sugar, and crumble in the yeast to activate it.
- Boil the potatoes, mash them, and season with salt. Mix with the warmed flour.
- Add the activated yeast mixture and the remaining warm milk. Knead into a semi-firm dough. Work it well, dust with flour, and let it rise until tripled in size.
- Divide the risen dough into small balls, place on a floured board, and let rest for 15 minutes.
- Stretch each fist-sized ball flat and fry in hot oil until golden brown on both sides.
- Serve topped with sour cream and cheese, or with a garlic sauce made from oil, sour cream, grated garlic, and salt.
