Ground Beef Tostadas with Salsa de Aguacate

Ingredients
- 1 lb ground beef
- 1/2 small onion, finely chopped
- 2 garlic cloves, minced
- 1-2 chipotles in adobo, diced
- 1-2 tablespoons adobo sauce
- 1 tablespoon chile powder (optional)
- 2-3 teaspoons Mexican oregano
- 1/4 teaspoon cumin
- 3/4 teaspoon salt, plus more to taste
- freshly cracked black pepper
- splash of water
- 1 avocado
- 1/2 garlic clove
- juice of 1 lime
- 1/4 teaspoon salt
- 1/4 cup water
- 4-5 cilantro sprigs
- 1 cup refried beans
- 1 cup shredded cheese
- freshly chopped cilantro
- 6-8 tostada shells
Steps
- Make the salsa de aguacate by blending the avocado flesh, 1/2 peeled garlic clove, cilantro sprigs, lime juice, 1/4 cup water, and 1/4 teaspoon salt until smooth. Add more water if needed to help it blend.
- Finely chop the onion and sweat it in oil over medium heat until softened.
- Add the ground beef to the pan and cook until browned, draining excess fat if desired.
- Add the minced garlic and cook for 30-60 seconds.
- Stir in the diced chipotles, adobo sauce, chile powder, cumin, oregano, salt, black pepper, and a splash of water. Cook over medium heat, then taste and adjust seasoning.
- Reduce heat to low to keep the beef warm.
- If making your own tostada shells, brush corn tortillas lightly with oil on both sides and bake at 400F for 4-5 minutes per side until crispy and golden. If using store-bought shells, warm them before serving.
- Prepare the toppings: shred the cheese and chop the cilantro.
- Assemble the tostadas by layering refried beans, ground beef, cheese, cilantro, and salsa de aguacate on each shell.
- Serve with an extra squeeze of lime if desired.
Notes
Chipotle seeds are often scraped out before dicing to reduce heat.
