Ground Beef Tostadas with Salsa de Aguacate

Ingredients

  • 1 lb ground beef
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1-2 chipotles in adobo, diced
  • 1-2 tablespoons adobo sauce
  • 1 tablespoon chile powder (optional)
  • 2-3 teaspoons Mexican oregano
  • 1/4 teaspoon cumin
  • 3/4 teaspoon salt, plus more to taste
  • freshly cracked black pepper
  • splash of water
  • 1 avocado
  • 1/2 garlic clove
  • juice of 1 lime
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 4-5 cilantro sprigs
  • 1 cup refried beans
  • 1 cup shredded cheese
  • freshly chopped cilantro
  • 6-8 tostada shells

Steps

  1. Make the salsa de aguacate by blending the avocado flesh, 1/2 peeled garlic clove, cilantro sprigs, lime juice, 1/4 cup water, and 1/4 teaspoon salt until smooth. Add more water if needed to help it blend.
  2. Finely chop the onion and sweat it in oil over medium heat until softened.
  3. Add the ground beef to the pan and cook until browned, draining excess fat if desired.
  4. Add the minced garlic and cook for 30-60 seconds.
  5. Stir in the diced chipotles, adobo sauce, chile powder, cumin, oregano, salt, black pepper, and a splash of water. Cook over medium heat, then taste and adjust seasoning.
  6. Reduce heat to low to keep the beef warm.
  7. If making your own tostada shells, brush corn tortillas lightly with oil on both sides and bake at 400F for 4-5 minutes per side until crispy and golden. If using store-bought shells, warm them before serving.
  8. Prepare the toppings: shred the cheese and chop the cilantro.
  9. Assemble the tostadas by layering refried beans, ground beef, cheese, cilantro, and salsa de aguacate on each shell.
  10. Serve with an extra squeeze of lime if desired.

Notes

Chipotle seeds are often scraped out before dicing to reduce heat.
