Csikós Tokány (Hungarian Herdsman's Stew)

Ingredients
- 150 g smoked bacon
- 2 onions
- 2 green peppers
- 800 g pork shoulder
- 3 cloves garlic
- 1 tbsp ground paprika
- 1 tomato
- 2 tbsp sour cream
- 1 tbsp flour
- Salt
- Pepper
Steps
- Cut the bacon into 3-4 mm strips. Peel and dice the onion. Wash the peppers and cut into pieces similar in size to the onion. Cut the pork into 7-8 mm strips, slightly on the diagonal. Peel and finely chop the garlic. Wash and dice the tomato.
- In a deep pan, fry the bacon over low heat, stirring occasionally, until translucent, about a few minutes.
- Add the onion and cook together until softened.
- Add the peppers, season with pepper, and cook until the mixture becomes glossy and translucent.
- Add the pork strips and a little salt (the bacon is already salty), and fry until the meat turns pale.
- Stir in the garlic, then the paprika, mixing well.
- Add the diced tomato and mix again.
- Pour in enough water to just cover the ingredients, cover the pan, and simmer on low heat for 60-70 minutes until the meat is tender.
- In a small bowl, mix the sour cream with the flour using a whisk until smooth.
- Temper the sour cream mixture with a little of the hot liquid from the pan, then stir it into the stew.
- Simmer for a few more minutes until the stew thickens slightly, then serve.
Notes
Traditionally served hot with nokedli (Hungarian dumplings), pasta, or rice, and pickles.
