Foolproof Basic Muffin Recipe

Ingredients
- 250 g flour
- 1/2 tsp salt
- 3 tsp baking powder
- 250 ml milk
- 1 egg
- 100 g sugar
- 60 ml oil
- butter, for greasing
Steps
- Preheat the oven to 200°C (400°F).
- In one bowl, sift together the flour, salt, and baking powder.
- In another bowl, whisk the milk, egg, and sugar, then stir in the oil.
- Pour the wet ingredients into the dry ingredients and mix until just combined into a thick batter. It's fine if it's a bit lumpy.
- If desired, fold in about 200 g of chocolate or fruit.
- Grease the top of a muffin tin and line the cups with paper liners.
- Spoon the batter into the liners, filling each about 3/4 full.
- Bake for about 25 minutes, until done. Remove from the oven and let cool before serving.
Notes
Don't overmix the batter; a lumpy batter still bakes into a light, tender muffin.
