Foolproof Basic Muffin Recipe

Ingredients

  • 250 g flour
  • 1/2 tsp salt
  • 3 tsp baking powder
  • 250 ml milk
  • 1 egg
  • 100 g sugar
  • 60 ml oil
  • butter, for greasing

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In one bowl, sift together the flour, salt, and baking powder.
  3. In another bowl, whisk the milk, egg, and sugar, then stir in the oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined into a thick batter. It's fine if it's a bit lumpy.
  5. If desired, fold in about 200 g of chocolate or fruit.
  6. Grease the top of a muffin tin and line the cups with paper liners.
  7. Spoon the batter into the liners, filling each about 3/4 full.
  8. Bake for about 25 minutes, until done. Remove from the oven and let cool before serving.

Notes

Don't overmix the batter; a lumpy batter still bakes into a light, tender muffin.
