Grilled Tofu Skewers

Ingredients

  • 400 g natural tofu
  • 3 tbsp soy sauce
  • 4 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp smoked paprika powder
  • 1 lemon
  • 1/2 tsp dried garlic
  • 200 g cherry tomatoes
  • 1/2 cucumber
  • salt
  • pepper
  • 1 handful fresh cilantro
  • 1 zucchini
  • green bell pepper

Steps

  1. Cut 400 g tofu into large cubes.
  2. In a bowl, mix 3 tbsp soy sauce, 2 tbsp olive oil, 1 tbsp maple syrup, 1 tsp smoked paprika, 1 tsp lemon juice, and 1/2 tsp dried garlic.
  3. Add the tofu to the marinade, stir to coat evenly, and let marinate for at least 30 minutes.
  4. Halve 200 g cherry tomatoes; dice 1/2 cucumber and the green bell pepper, reserving some bell pepper for the skewers.
  5. Combine the remaining vegetables with 2 tbsp olive oil, 1 tsp lemon juice, salt, pepper, and chopped cilantro to make a salad.
  6. Wash and slice the zucchini into 0.5–1 cm pieces.
  7. Thread zucchini, green bell pepper, and marinated tofu alternately onto skewers.
  8. Grill the skewers over medium heat for 3–4 minutes per side, until the tofu is golden and the zucchini is slightly softened.
  9. Season with salt and pepper, and serve over the prepared salad.
