Beans and Chorizo on Toast

Ingredients

  • 1 tbsp extra-virgin olive oil, plus extra for drizzling
  • 2 chorizo sausages, thickly sliced
  • 1/2 red onion, thinly sliced
  • 2 garlic cloves, crushed
  • 400 g canned butter beans, drained and rinsed
  • 200 g canned cherry tomatoes
  • 2 fresh oregano sprigs, plus extra leaves to serve
  • 1 fresh bay leaf
  • 2 tsp sherry vinegar, or to taste
  • 4 thick slices sourdough bread
  • Shaved Manchego cheese, to serve

Steps

  1. Heat oil in a deep frying pan over medium-high heat. Add chorizo and cook, stirring occasionally, until browned, about 3-4 minutes.
  2. Add onion and garlic; cook, stirring occasionally, until tender, about 3-4 minutes.
  3. Add butter beans, tomatoes, oregano, bay leaf, and 1/4 cup water. Simmer until liquid is reduced by half and well flavored, about 5-6 minutes.
  4. Remove herbs, stir in vinegar, and season to taste.
  5. Meanwhile, preheat grill to high. Drizzle bread slices with oil and grill, turning once, until golden, about 1-2 minutes per side.
  6. Top toasted bread with the bean and chorizo mixture. Scatter with oregano leaves and shaved Manchego to serve.
