Brownie Caramel Slice

Ingredients
- 1 packet chocolate brownie mix (with chocolate chunks)
- 250g unsalted butter, melted, divided
- 2 eggs
- 2 x 398g cans sweetened condensed milk
- 1/3 cup (115g) golden syrup
- 2 teaspoons vegetable oil
Steps
- Preheat oven to 160°C (325°F). Mix the brownie mix with half the melted butter and the eggs to form a batter, reserving the chocolate chunks.
- Spoon batter into a greased and lined 20cm x 30cm slice tin. Bake for 20 minutes, until dry to the touch.
- In a saucepan over medium heat, combine condensed milk, remaining butter, and golden syrup. Bring to a simmer, then reduce heat to low and cook for 10 minutes, stirring constantly, until thick and deep golden.
- Pour the caramel over the baked brownie base and return to the oven. Bake a further 15 minutes, until bubbling and dark golden at the edges.
- Cool at room temperature for 10 minutes, then refrigerate for 1 hour until completely cool.
- Melt the reserved chocolate chunks with the oil in a heatproof bowl over simmering water, stirring until smooth.
- Pour melted chocolate over the cooled slice and spread evenly. Refrigerate for 30 minutes until firm.
- Cut into slices or squares using a large hot knife.
