Brownie Caramel Slice

Ingredients

  • 1 packet chocolate brownie mix (with chocolate chunks)
  • 250g unsalted butter, melted, divided
  • 2 eggs
  • 2 x 398g cans sweetened condensed milk
  • 1/3 cup (115g) golden syrup
  • 2 teaspoons vegetable oil

Steps

  1. Preheat oven to 160°C (325°F). Mix the brownie mix with half the melted butter and the eggs to form a batter, reserving the chocolate chunks.
  2. Spoon batter into a greased and lined 20cm x 30cm slice tin. Bake for 20 minutes, until dry to the touch.
  3. In a saucepan over medium heat, combine condensed milk, remaining butter, and golden syrup. Bring to a simmer, then reduce heat to low and cook for 10 minutes, stirring constantly, until thick and deep golden.
  4. Pour the caramel over the baked brownie base and return to the oven. Bake a further 15 minutes, until bubbling and dark golden at the edges.
  5. Cool at room temperature for 10 minutes, then refrigerate for 1 hour until completely cool.
  6. Melt the reserved chocolate chunks with the oil in a heatproof bowl over simmering water, stirring until smooth.
  7. Pour melted chocolate over the cooled slice and spread evenly. Refrigerate for 30 minutes until firm.
  8. Cut into slices or squares using a large hot knife.
