Caramelised Onion No-Knead Tray Bread

Ingredients

  • flour (quantity not specified)

  • 1 tablespoon caster sugar, for dough
  • salt, for dough
  • 1 tablespoon extra virgin olive oil, plus extra for brushing
  • 3 large onions, thinly sliced
  • 1 tablespoon caster (superfine) sugar, for onions
  • sea salt and cracked black pepper
  • milk, for brushing
  • butter, to serve

Steps

  1. Make the dough: combine flour, yeast, sugar, salt, water and oil in a large bowl and mix well.
  2. Cover with a damp tea towel and set aside in a warm place for 1 hour, or until doubled in size.
  3. Heat oil in a large non-stick frying pan over high heat. Add onions, sugar, salt and pepper, and cook, stirring occasionally, for 8 minutes until golden and caramelised.
  4. Turn out the risen dough onto a lightly floured surface and press into a 3cm-thick rectangle.
  5. Top the dough with the caramelised onion mixture, fold the dough over to enclose the filling, and press to seal.
  6. Cut the filled dough into 7 equal portions and arrange cut-side up on a well-greased 20cm x 30cm oven tray.
  7. Cover with a damp tea towel and set aside for 20 minutes, or until risen.
  8. Preheat oven to 200°C (400°F).
  9. Brush the risen dough with milk.
  10. Bake for 30–35 minutes, or until golden brown and cooked through.
  11. Serve warm with butter.
