Chargrilled Zucchini with Garlic and Lemon

Ingredients

  • 5 green and grey zucchini (about 1kg), thinly sliced lengthways
  • 1 clove garlic, crushed
  • 1 teaspoon finely grated lemon rind
  • ¼ cup (60ml) extra virgin olive oil
  • sea salt and cracked black pepper
  • ½ cup flat-leaf parsley leaves, finely chopped
  • ½ teaspoon chilli flakes
  • sliced bread, to serve

Steps

  1. Preheat a chargrill pan or barbecue over high heat.
  2. Cook the zucchini in batches, about 3 minutes per side, until charred and cooked through.
  3. While the zucchini cooks, mix garlic, lemon rind, oil, salt, and pepper in a medium bowl.
  4. Gently toss the cooked zucchini in the oil mixture.
  5. Top with parsley and chilli flakes, and serve with bread.
