Beef Salpicao

Ingredients

  • 2 pounds ribeye steak, cut into 1-inch cubes
  • salt and pepper, to taste
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon brown sugar
  • 1/4 teaspoon red chili pepper flakes
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 head garlic, peeled and minced

Steps

  1. Season beef with salt and pepper; marinate for about 10 minutes.
  2. In a small bowl, whisk together Worcestershire sauce, soy sauce, brown sugar, and chili flakes until sugar dissolves. Set aside.
  3. In a wide, thick-bottomed pan over medium heat, melt butter with olive oil.
  4. Once butter is warm but not hot, add garlic and cook, stirring, for about 1 minute until lightly browned.
  5. Increase heat to high, stirring garlic continuously to prevent burning, until pan is very hot.
  6. Add beef in a single layer and sear for 1-2 minutes per side.
  7. Pour in the sauce mixture and cook, stirring, for 3-5 minutes.
  8. Remove from pan and garnish with chopped green onions and fried garlic bits, if desired.
