Simple Super Greens Pasta

Ingredients

  • 400g dried wholemeal pasta
  • ¼ cup extra virgin olive oil
  • 4 cloves garlic, sliced
  • 1 long red chilli, sliced
  • 5 cups shredded kale leaves
  • 2 zucchini, grated
  • 2½ cups baby spinach leaves
  • ½ cup sauerkraut
  • â…“ cup shredded mint leaves
  • 1 tablespoon finely grated lemon rind
  • sea salt and cracked black pepper
  • buffalo mozzarella, burrata or grated parmesan, to serve
  • lemon wedges, to serve

Steps

  1. Cook pasta in a large pot of boiling salted water for 8 minutes, until al dente. Drain, reserving 1 cup of pasta water, and set aside.
  2. Return the pot to medium heat and add the oil, garlic and chilli. Cook 2-3 minutes until garlic softens.
  3. Add kale and zucchini, cook stirring for 3 minutes until kale wilts.
  4. Add spinach, sauerkraut, mint, lemon rind, salt and pepper, and stir through.
  5. Add the pasta and toss to combine, adding a splash of reserved pasta water if needed.
  6. Serve with buffalo mozzarella, burrata or parmesan, and a squeeze of lemon.
