Simple Super Greens Pasta

Ingredients
- 400g dried wholemeal pasta
- ¼ cup extra virgin olive oil
- 4 cloves garlic, sliced
- 1 long red chilli, sliced
- 5 cups shredded kale leaves
- 2 zucchini, grated
- 2½ cups baby spinach leaves
- ½ cup sauerkraut
- â…“ cup shredded mint leaves
- 1 tablespoon finely grated lemon rind
- sea salt and cracked black pepper
- buffalo mozzarella, burrata or grated parmesan, to serve
- lemon wedges, to serve
Steps
- Cook pasta in a large pot of boiling salted water for 8 minutes, until al dente. Drain, reserving 1 cup of pasta water, and set aside.
- Return the pot to medium heat and add the oil, garlic and chilli. Cook 2-3 minutes until garlic softens.
- Add kale and zucchini, cook stirring for 3 minutes until kale wilts.
- Add spinach, sauerkraut, mint, lemon rind, salt and pepper, and stir through.
- Add the pasta and toss to combine, adding a splash of reserved pasta water if needed.
- Serve with buffalo mozzarella, burrata or parmesan, and a squeeze of lemon.
