Chicken Parma Schnitzel

Ingredients

  • 4 chicken breast fillets (180g each), trimmed and halved lengthways
  • 16 basil leaves
  • 8 slices buffalo mozzarella
  • cracked black pepper
  • 8 slices prosciutto
  • 3 cups fresh sourdough breadcrumbs
  • 1 cup finely grated parmesan
  • 1/3 cup finely chopped flat-leaf parsley
  • extra virgin olive oil, for drizzling
  • basil leaves and crunchy slaw, to serve

Steps

  1. Preheat oven grill (broiler) to high.
  2. Place chicken fillets on a lined baking tray.
  3. Top each fillet with 2 basil leaves, a slice of mozzarella, and pepper.
  4. Wrap each fillet with a slice of prosciutto, folding it underneath to enclose.
  5. Combine breadcrumbs, parmesan, and parsley in a bowl.
  6. Press the breadcrumb mixture onto each chicken fillet to coat.
  7. Drizzle generously with olive oil.
  8. Grill for 10-12 minutes, until golden and cooked through.
  9. Serve with basil leaves and crunchy slaw.
