Chicken Parma Schnitzel

Ingredients
- 4 chicken breast fillets (180g each), trimmed and halved lengthways
- 16 basil leaves
- 8 slices buffalo mozzarella
- cracked black pepper
- 8 slices prosciutto
- 3 cups fresh sourdough breadcrumbs
- 1 cup finely grated parmesan
- 1/3 cup finely chopped flat-leaf parsley
- extra virgin olive oil, for drizzling
- basil leaves and crunchy slaw, to serve
Steps
- Preheat oven grill (broiler) to high.
- Place chicken fillets on a lined baking tray.
- Top each fillet with 2 basil leaves, a slice of mozzarella, and pepper.
- Wrap each fillet with a slice of prosciutto, folding it underneath to enclose.
- Combine breadcrumbs, parmesan, and parsley in a bowl.
- Press the breadcrumb mixture onto each chicken fillet to coat.
- Drizzle generously with olive oil.
- Grill for 10-12 minutes, until golden and cooked through.
- Serve with basil leaves and crunchy slaw.
