Saucy Egg Noodles

Ingredients

  • 400g fresh egg noodles
  • 2 cloves garlic, crushed
  • 4 green onions (scallions), sliced, plus extra to serve
  • 500g pork or chicken mince
  • 2 cups (500ml) chicken stock
  • peanut butter
  • hoisin sauce
  • soy sauce
  • sesame oil
  • chilli oil
  • honey
  • long red chilli, sliced, to serve
  • roasted salted peanuts, chopped, to serve

Steps

  1. Cook the noodles according to the packet instructions, then refresh under cold water, drain, and set aside.
  2. Make the spicy peanut sauce by whisking together the peanut butter, hoisin sauce, soy sauce, sesame oil, chilli oil, and honey in a bowl.
  3. Heat a large frying pan over medium-high heat. Add half the peanut sauce, the garlic, and green onion, and cook for 1 minute.
  4. Add the mince to the pan and cook for 7-8 minutes until well browned.
  5. In a small saucepan, heat the chicken stock over medium-low heat for 5 minutes until hot.
  6. Stir the remaining peanut sauce into the hot stock until combined and heated through.
  7. To serve, divide the sauce mixture between bowls, top with hot noodles and the browned mince.
  8. Garnish with extra green onion, sliced red chilli, and chopped roasted peanuts.
