Saucy Egg Noodles

Ingredients
- 400g fresh egg noodles
- 2 cloves garlic, crushed
- 4 green onions (scallions), sliced, plus extra to serve
- 500g pork or chicken mince
- 2 cups (500ml) chicken stock
- peanut butter
- hoisin sauce
- soy sauce
- sesame oil
- chilli oil
- honey
- long red chilli, sliced, to serve
- roasted salted peanuts, chopped, to serve
Steps
- Cook the noodles according to the packet instructions, then refresh under cold water, drain, and set aside.
- Make the spicy peanut sauce by whisking together the peanut butter, hoisin sauce, soy sauce, sesame oil, chilli oil, and honey in a bowl.
- Heat a large frying pan over medium-high heat. Add half the peanut sauce, the garlic, and green onion, and cook for 1 minute.
- Add the mince to the pan and cook for 7-8 minutes until well browned.
- In a small saucepan, heat the chicken stock over medium-low heat for 5 minutes until hot.
- Stir the remaining peanut sauce into the hot stock until combined and heated through.
- To serve, divide the sauce mixture between bowls, top with hot noodles and the browned mince.
- Garnish with extra green onion, sliced red chilli, and chopped roasted peanuts.
