Korean Marinated Eggs (Mayak Eggs)

Ingredients

  • 12 eggs
  • 6 cloves garlic, minced
  • 6 spring onions, finely sliced
  • 4 red chillies, finely sliced
  • 250ml soy sauce
  • 100ml water
  • 3 tbsp rice wine vinegar
  • 2 tbsp fish sauce
  • 100ml honey
  • 40g sesame seeds
  • Cooked rice, to serve

Steps

  1. Bring a large saucepan of water to a boil. Gently add cold eggs and simmer for 7 minutes.
  2. Transfer eggs to iced water to cool, then peel once cool enough to handle.
  3. Mince the garlic and finely slice the spring onions and chillies.
  4. In a container, combine the garlic, spring onions, chillies, soy sauce, water, rice wine vinegar, fish sauce, honey, and sesame seeds. Whisk to combine.
  5. Place the peeled eggs into the marinade, ensuring they are fully covered.
  6. Cover with a paper towel to help distribute the marinade evenly.
  7. Refrigerate overnight, or up to 4 days.
  8. Serve with freshly cooked rice, drizzled with the marinade.

Notes

Marinating time (overnight to 4 days) is not included in the listed prep/cook times.
