Korean Marinated Eggs (Mayak Eggs)

Ingredients
- 12 eggs
- 6 cloves garlic, minced
- 6 spring onions, finely sliced
- 4 red chillies, finely sliced
- 250ml soy sauce
- 100ml water
- 3 tbsp rice wine vinegar
- 2 tbsp fish sauce
- 100ml honey
- 40g sesame seeds
- Cooked rice, to serve
Steps
- Bring a large saucepan of water to a boil. Gently add cold eggs and simmer for 7 minutes.
- Transfer eggs to iced water to cool, then peel once cool enough to handle.
- Mince the garlic and finely slice the spring onions and chillies.
- In a container, combine the garlic, spring onions, chillies, soy sauce, water, rice wine vinegar, fish sauce, honey, and sesame seeds. Whisk to combine.
- Place the peeled eggs into the marinade, ensuring they are fully covered.
- Cover with a paper towel to help distribute the marinade evenly.
- Refrigerate overnight, or up to 4 days.
- Serve with freshly cooked rice, drizzled with the marinade.
Notes
Marinating time (overnight to 4 days) is not included in the listed prep/cook times.
